KHMER KROM ETHIC FOODS WITH PAHOK.
These are very few Khmer ethic recipes we cook or eat with Pahok(pickle fish),Mam(fermented fish)and Kapik(fermented shrimp) that very popular in Kampuchea Krom.
Khmer Krom love food with Pahok(pickle fish) flavor.Pahok photo. Mam(fermented fish) Mam photo. Or Kapik( shrimp pasted)Shrimp pasted photo.
“Pahok” or "Mam" made from fresh-water fish, mud-fish/snakehead fish (trey touk), black snakeskin fish (trey ca-tho) or Asian Catfish (trey naing).
Good ”Pahok” or "Mam" is obtained when after the fish have been marinated with salt:sun dry and it is allowed to ferment in a jar for a year or more.
The best “Pahok” or Mam tastes like gourmet caviar.The lighter color "Pahok" the better is taste, for "Mam" the redder the color is the better, it will have very mild odor and you can eat it raw (uncooked) .
”Pahok” is the Khmer “Anchovy”, it is absolute scrumptious and most people are addicted to the taste. To me, "Pahok" or "Mam" taste much better than caviar. :)
